Spudnut Donuts Recipe

Just in case anybody wants to start their own tradition of making Spudnut Donuts at Halloween time here is the recipe - happy eating!

Cook 3 medium peeled potatoes in salted water
Sae 1 cup of potato water
Drain remaining water
Mash potatoes and measure out 1 cup

2 packages yeast
1/2 cup water
2 T sugar
(proof yeast)
Add to yeast mixture:
1 cup potato water
2 cups flour
Mix well and let rise 1 hour
Add to the above after rising:
1 cup mashed potatoes
1/2 cup butter
2 beaten eggs
3/4 cup sugar
3/4 t nutmeg
1 1/2 t salt
4 1/2 cups flour
mix well and let rise 1 hour
Roll out about 1 - 2" thick (I do about 1") -
cut with donut cutter or 1 large circle and 1 smaller circle for the hole
let sit about 20 minutes
fry donuts in vegetable oil
(make sure oil is hot - using a fork pick up donut and place in oil - BE CAREFUL!)
(cook until dark golden brown color and the color shows through the center of donut up to top)
(flip donut over with fork - then cook second side until dark golden brown color)
Frost after cooled OR what we do is quickly frost in a glaze on both sides
powdered sugar, canned milk and vanilla: runny frosting but thick enough to coat donut and then allow excess to drip off (I put on a wire rack on top of a cookie sheet to drip off so donut doesn't go soggy with frosting)
